| When we gentiles get saved - we don't stop being gentiles. So when Jews get saved they don't stop being Jewish. So Paul could stay observant while trusting in Jesus only for his salvation while he continued not to eat pork. And the gentiles who were saved were only obligated to abstain from eating food offered to idols, from consuming blood or the meat of strangled animals, and from sexual immorality - because that's what the church bound on Earth resulting in it being bound in Heaven also.
