My two youngest daughters do not like vegetables very much. One of them will eat Korean style spinach. The other one doesn’t really eat anything green unless its cucumbers candy. Both will eat dill cucumber pickles.I had picked some yellow squash in pickle juice once. So I decided to pickle some zuccini and see if the kids would eat it. The older of those two girls kept eating the zucchini from day one. I had her help make it. That could have been part of it.I picked some broccoli many years ago, and I liked it. I picked some broccoli and cauliflower, or I’m waiting on it to pickle. It still tastes raw after a couple of days. Pickled broccoli was good, I thought. It may still have too much of the cabbage taste for the kids. If I can get them to eat that, I’ll have a good method to get the kids to eat some really nutritious vegetables. Pickling preserves vitamins and may make vegatables more healthy.The secret to good dill pickles, btw, is to add mustard seed, and of course, garlic. The pickling spice I’m using also has coriander________________
